
Valentine’s day is just days away and what better way to share the love than with a delicious stack of pancakes. We asked surf chef, leoneloveslife to share her go-to vegan recipe and regardless of whether you’re making them for your significant other, your BFF or even yourself, this simple recipe ticks all the boxes.

I N G R E D I E N T S
1 Tbsp white vinegar
1 cup unsweetened almond milk
2 cups Gluten Free oats
2 ripe bananas
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
pinch salt
coconut oil for frying
T O P P I N G S
Blueberries
Almond butter
Coconut chips
Maple syrup for daaaaaays
optional - bee pollen *not vegan
D I R E C T I O N S
1. Add the vinegar to almond milk in a bowl and let sit for about 5 mins, to create vegan buttermilk.
2. Blend your oats into flour by pulsing in a blender.
3. Mash bananas
4. In a large bowl combine all ingredients and mix well with a spoon.
5. Heat your pan on a medium heat and add a little coconut oil. Once melted add your batter (approx 1/3 cup per pancake) when you start to see bubbles pop on the top, flip them over and cook for a further few minutes on the other side.
6. Add all the toppings and lavish with maple syrup because Yum.
